Carrots (about 1 lb), peeled and cut .2.tbsp olive oil .2 tbsp honey .1 tsp dried thyme or rosemary .Salt and pepper Instructions:

1.Preheat oven to 400°F (200°C).
2.Toss carrots with olive oil, honey, herbs, salt, and pepper.
3.Spread on a baking sheet in a single layer.
4.Roast 20–25 minutes, turning once, until tender and caramelized.
Serve warm.
